INGREDIENTS

  • 1 avocado
  • Extra virgin olive oil
  • Lime wedges
  • Salt and ground black pepper

INSTRUCTIONS

  1. Cut avocado in half lengthwise and remove the seed. Brush with extra virgin olive oil and squeeze lime juice generously on top. Season with salt and pepper.
  2. Place cut side down on a grill at medium-high heat for 4 to 5 minutes (until warm and char marks appear). Instead of tongs, use a spatula to remove from the grill. Sliding a spatula between the avocado and the grill rack helps remove the avocado, which can stick to the rack.

Main Course: Gluten-Free Portobello Sliders

Makes: About 6 sliders

INGREDIENTS

  • 4 portobello mushroom caps
  • Buns of your choice (gluten-free)
  • Fixings of your choice (sprouts, onion, tomato, avocado, blue cheese, etc.)

For the sauce:

  • 1 teaspoon olive oil
  • 1/4 onion, grated
  • 1 clove of garlic, minced
  • 3/4 cup ketchup
  • 2 tablespoons dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon Worcestershire (or use the vegan brand)
  • 1/2 to 1 teaspoon Sriracha or hot sauce
  • Salt and pepper to taste

INSTRUCTIONS

  1. Make the sauce: In a small saucepan, heat oil. Add onion and garlic. Stir until translucent. Stir in the rest of the ingredients. If the mixture is not already bubbling, increase heat. As soon as it bubbles, reduce to a simmer. Let it reduce and thicken (5 to 10 minutes), stirring occasionally. Taste and adjust seasonings to your liking.
  2. Depending on the size of your portobellos, either trim to fit the size of your slider buns or cut into strips.
  3. Liberally brush both sides of the mushrooms with sauce and let them marinate for 15 to 20 minutes.
  4. Heat broiler or grill. Cook mushrooms, flipping halfway through. The time will depend on the heat of your broiler or grill. Cook about 3 to 5 minutes per side.
  5. When mushrooms are done, brush with more sauce and serve with your slider fixings.

INGREDIENTS

  • 1 pint (16 ounces) strawberries, hulled and quartered
  • 1/4 cup agave syrup
  • 1/2 cup French Vanilla Svelte
  • Juice from 1 lemon

INSTRUCTIONS

  1. Puree your strawberries in a food processor until smooth.
  2. Combine honey, French Vanilla Svelte, and lemon juice in a bowl.
  3. Once blended, stir the mixture into the fruit puree.
  4. Pour your sorbet mixture into a shallow, freezer-safe container. Place in freezer until frozen, removing every hour to stir and blend mixture.
  5. Scoop and enjoy!
